OUR FARM

HISTORY

The ZeeLee Cattle Company is situated on the Young Family Sesquicentennial Farm in Central Illinois. Our family of four represent the 6th and 7th generations of Young Family descendants to live on and steward this land. For the past 64 years, the farm has been owned and managed, in large part, by the women of our family -- my grandmother (Zella Lee), my mother, my aunt, and myself. Presently, our family is working together to ensure a healthy and sustainable future for both the land and subsequent generations.

OUR HERD

We raise registered Irish Dexter cattle, with several registered Shorthorns and Herefords tossed in for good measure. Irish Dexters are a heritage breed, listed by the Livestock Conservancy as recently recovering. They are the smallest of the standard cattle breeds and are well-suited to grass-finishing. Dexter cattle are known for their docile temperaments and excellent maternal qualities. In addition to these breed characteristics, Dexter beef is known for having a unique, rich flavor profile with a tremendous amount of umami. Dexter beef is also known for being extremely high in Omega 3’s, Omega 6’s, and Omega 9’s, while being lower in cholesterol than many other beef options.

YOUR FARMERS

After graduating from college, Nathan and I, both born and raised in Illinois, were called to the mountains and graduate schools of Colorado. Colorado held many wonderful adventures and was the perfect backdrop for us to earn our master’s degrees, begin our careers and start our family. However, after I was diagnosed with autoimmune issues and several severe food allergies, it became clear that our path needed to change. Being forced to give up our vegetarian lifestyle of 13 years, we felt deeply commited to ensuring our meat consumption was in line with our values for our fellow creatures, as well as the earth. SO… in the fall of 2012 we left Denver and moved our family of four back to Illinois to live on my family’s farm. I was not raised on the farm, and I did not grow up with much knowledge of the farm business or farming itself. We are first generation farmers, learning and growing every day. We are dedicated to humanely and ethically raising beef cattle on our regenerative farm where we focus on environmental stewardship, soil health, and animal welfare.
